Now that the holidays and my birthday are over, it's time to start the requisite journey to exercising more and eating better. For me, that means figuring out how to find time in my busy days for the gym more often than I'm going now. It also means cutting back on the wine consumption and carbs. This past Sunday, I decided to make a turkey meatloaf so I'd have food at home during the week for dinner and I served it up with green beans and mashed cauliflower which really does emulate mashed potatoes. I really loved the mashed cauliflower and it was so easy to make. I cut up a head of cauliflower and cooked it in salted boiling water for about 10 minutes. Then I mashed the cauliflower with a potato masher, mixed in a pat of butter, added a few pinches of salt and topped it off with chives. So delish!
