Weekend Tidbits Mags and my Kindle; the perfect beach reading material. I finally finished the last of the Hunger Games books. I thought the last of the three was a bit slower than the rest, but they are great for beach reading.
I love a good beach day and I was up and out early to beat the crowds. I made it to Wingaersheek Beach in Gloucester by 9 and was gone by 11. You can see I actually had some space to myself. But as the morning went on, I found my serenity being interrupted by lots of loud talkers and cigarette smokers.
After I left the beach, I stocked up on provisions from Target and Whole Foods including the fixings for my dinner. I made lemon basil chicken and zucchini boats with tomato bruschetta.
For the chicken, I browned a couple of boneless breasts in olive oil. Once they were browned, I took them out of the pan and made a sauce of the zest and juice of one lemon, a bunch of basil leaves and chicken broth. I let that simmer and cook down a bit and then added the chicken back into the sauce to finish cooking.
For the zucchini, I cut it in half and scooped out the insides which I stuffed with a tomato bruschetta mixture of tomatos, basil, garlic, salt, pepper, olive oil and mozzarella cheese. Then I cooked the zucchini in the oven at 350 for about 15 minutes. It was a yummy and healthy meal.
